What Is Medovik (Медовик)?
Medovik (Russian: медови́к, from мёд — “honey”) is a multi-layer honey cake beloved across countries of the former Soviet Union and shared Eastern European baking traditions. Thin honey-infused layers are stacked with a creamy filling — often sour cream (smetana) or condensed milk — and finished with crumbs from leftover cake.
The identifying flavor is honey: warm, aromatic, and delicately sweet rather than sugary. Families and bakeries vary the cream, the number of layers, and finishing touches, but the heart of Medovik stays the same — honey cake and patience.
